I backed it off 4 degrees. It's kind of baffling actually. The next run out after that, the oil temp climbed to 125 Celsius and water temp to 110. After that, I added a little antifreeze and a 1/2 qt of oil. The rest of the day, the water temp barely made 100 C and the oil temp 110 C. 
So, not sure if it was the timing, the fluid adds or what. But I was shocked to see the water temp so low. Maybe had some air in the system that never got burped properly after I changed the water pump earlier this year (?). Not sure.
