What's the definition of a Motorcycle Cafe Racer? Kerry, thought you may be interested in this article - John Stein
 
Café racers began in England in the 50's early 60's where riders would strip their street bikes as light as possible and tune the engines for increased performance. They formed loose "clubs" that would meet and race from local "Café's" to the next as fast as they could ride. The big goal then was to build a bike that could reach 100 mph and as I recall the Vincent Black Shadow was the first production bike to achieve that distinction.

I don't know John Stein but I would like to get his book.
Sandy Kosman mentioned in the article offered me a job at his second story shop on Fell St. in San Francisco when I was about to leave the Navy in '72. Sandy was one of the best motorcycle racing parts designers and innovators in MC drag racing history. A genius...
